In macro gallery, damaged edges sub-gallery. Dozen of new photos depicting edge damage and deformations on three different knives - Global G-61, Henckels Chefs knife and Fiberware boning knife. Fiberware edge was royally messed up. Haven't seen a kitchen knife with an edge like that for a long time. Not quite sure how did it cut anything at all. Does make some entertaining pix though :) Enjoy.

Well, this one went quick, at least the initial review. Plus the results of the first two cutting sessions with it. Overall, it is an excellent knife, it is very well made, looks really good and cuts even better. Kitaeji cladding surface is very nicely done, very smooth and the pattern is really beautiful. Was worth waiting 5 months for it though.

Third and for now final knife(for now) from Shun Classic series is reviewed and the review is up. I think the most interesting part is the damages that I have found on the edge. Macro photos of the knife edge are attached to the review as well.

Loads of new micrographs, or knife edge macro photos posted in macro gallery. That includes mirror polished edge micrographs for my new Shigefusa Kitaeji Gyuto, damaged edge sections for upcoming Shun Classic Paring Knife review, Sanetsu ZDP-189 Gyuto surface photos, and quite a few other pix. Somehow managed and took a few photos of this magnificent knife. And also, today I've used it for the first time. Superb kitchen knife and superb cutter. Even with all the knives I have at my disposal, it's hard to find something that matches its cutting performance. One of the widest gyutos kn my collection, 56mm at the heel. This is good :) All I can say, that was 640$ well spent. Not the cheap one, but it is really worth it. Looks beautiful and cuts better than a razor.

I have been procrastinating on this one for years. Don't really know why. I use it pretty much daily for cheese cutting, but never managed to put up a review. Finally,when I had to post Gude review I figured it was too much posting just Gude, so I've finished up Global Cheese knife review as well. It's pretty good for what it was designed and I like it better than Gude cheese knife.

OMG!!! What a knife it is. Fit and finish are simply superb. Kitaecji (damascus) pattern is beautiful. Nice rounded spine and mirror polished edge. You can tell the real master made it. My respect to Mr. Izuka, the maker of Shigefusa knives. I know now why his knives are so highly prized in Japan and all over the world. I'm definitely gonna use it. Too good to be a "Safe Queen"

This one was fast. It wasn't for me, so I didn't have much time to play with it. However I did manage to test it head to head with Global cheese knife. Overall it's an ok knife, but I wouldn't buy it again. Too small of a handle. Never seen 160mm(5.5") knife with the handle that narrow. What's up with that?

Finally the review is finished :) At least for now. The biggest and toughest bread knife I have ever seen and handles. It is a monster knife, but works superbly for the bread of all types. If you are not a knife nut like me I am sure you can use it for many other cutting tasks as well, starting from vegetables and ending with meat slicing.

Summary and discussion of the California state knife laws. That includes the laws defining what is legal to buy,sell and posses and street carry laws. As usual, you have to remember that besides the state law there are local laws and those may restrict what is legal under state law. Be sure to check with those as well.
